Ingredients of chicken stuffed with caramelized onions and nuts:

  • Whole chicken 1200 gr.
  • Finely chopped medium onion.
  • 3 large onions, sliced.
  • ¼ cup of raisins.
  • ¼ cup of pine nuts.
  • ¼ cup of cashews.
  • 3 tablespoons of oil.
  • ¾ teaspoon of sugar.
  • Salt and black pepper to taste.

How to prepare:

  • Bring a small bowl and put grated onions, salt and black pepper in it and stir well.
  • Season the chicken well with the onion mixture prepared before, inside and out, then leave it aside for at least half an hour, preferably a full night in the fridge.
  • Put a large saucepan over medium heat, then add the oil and leave it until it gets hot, then add the onions and stir-fry for two minutes.
  • Add sugar to the onions and stir constantly until the onions are golden.
  • Remove the onions from the heat and set aside, then add the raisins, cashews and pine nuts in the same pan and stir for 3-4 minutes.
  • Add the nuts to the caramelized onions and mix well.
  • Preheat the oven at 180 degrees Celsius.
  • Bring a well-washed chicken and filtered water and stuff the chicken with caramelized onions and nuts.
  • Place the chicken in an oven tray, pour ½ cup of water into the bottom of the tray, cover the tray with foil, and place in the oven for at least 45 minutes, or until the chicken is done.
  • Remove the foil, then place the tray under the oven grill for 5 minutes, until the chicken is browned.
