
Ingredients of chicken stuffed with caramelized onions and nuts:
- Whole chicken 1200 gr.
- Finely chopped medium onion.
- 3 large onions, sliced.
- ¼ cup of raisins.
- ¼ cup of pine nuts.
- ¼ cup of cashews.
- 3 tablespoons of oil.
- ¾ teaspoon of sugar.
- Salt and black pepper to taste.
How to prepare:
- Bring a small bowl and put grated onions, salt and black pepper in it and stir well.
- Season the chicken well with the onion mixture prepared before, inside and out, then leave it aside for at least half an hour, preferably a full night in the fridge.
- Put a large saucepan over medium heat, then add the oil and leave it until it gets hot, then add the onions and stir-fry for two minutes.
- Add sugar to the onions and stir constantly until the onions are golden.
- Remove the onions from the heat and set aside, then add the raisins, cashews and pine nuts in the same pan and stir for 3-4 minutes.
- Add the nuts to the caramelized onions and mix well.
- Preheat the oven at 180 degrees Celsius.
- Bring a well-washed chicken and filtered water and stuff the chicken with caramelized onions and nuts.
- Place the chicken in an oven tray, pour ½ cup of water into the bottom of the tray, cover the tray with foil, and place in the oven for at least 45 minutes, or until the chicken is done.
- Remove the foil, then place the tray under the oven grill for 5 minutes, until the chicken is browned.
